Product introduction
Lipases belong to the carboxylic ester hydrolases that progressively hydrolyze triglycerides into glycerol and fatty acids. Lipases are found in the tissues of animals, plants and microorganisms (such as molds and bacteria) that contain fat. "These include phosphatase, sterolase, and carboxyesterase." According to the substrate specificity of lipase, it can be divided into three categories: fatty acid specificity, position specificity and stereospecificity. According to the different sources of lipase, lipase can also be divided into animal lipase, plant lipase and microbial lipase. Lipase from different sources can catalyze the same reaction, but under the same reaction conditions, the rate and specificity of the enzymatic reaction are not the same.
Scope of application
Fatty acids are widely used in food, medicine, leather, daily chemical industry and so on.
Unit definition
The hydrolysis of 1 microequivalent of fatty acid triglyceride per 1h at pH7.2 and 37℃ is equivalent to the production of 10 μlCO 2 in 30min.
